These 2 ingredient banana pancakes are delicious, low calories and filling. They only take a couple minutes to make and are completely satisfying.
Now I have to admit that I have been seeing variations of this recipe all over Pinterest for at least a year now. I have tried it a few times with no success! I followed the directions exactly and ended up with something that tasted like a banana fried egg. NOT delicious…
With some trial and error I have sorted out where I went wrong and actually made a real pancake this time! I understand now why people are so crazy about this. The egg is packed with protein and really helps to keep you full while the sweetness of the banana and the carbs it provides it really satisfying.
They come out a little flatter than a pancake and I found that making little pancakes turned out the best but don’t be discouraged, I made one pan-sized one (for testing purposes 😛 ) and it turned out great too.
The trick here is to make sure to use a banana that has never been frozen. Unfortunately this is not the recipe to use up your freezer bananas, For that you should check out my banana muffins.
It turns out that you need that denser fibre of a fresh banana to make it just right.
- 1 ripe banana (approx 80 grams)
- 2 large eggs
- Mash everything together or pop in your blender for a few seconds but try not to get it too frothy
- Pour into a non-stick pan on medium heat, flip when they become cooked around the edges
- Top with some honey, maple syrup or fruit and enjoy
Now that you have the basic recipe down there are so many options for “spicing them up”. Today I tried them with a little cinnamon and vanilla. A little chocolate PB2 would be amazing or even a little protein powder. Also mix-ins like fruit, chocolate chips or nuts!
