I have this banana muffin recipe that has been in my family for years. It is so easy to make and you will almost always have all the ingredients you need to make this in your cupboards.
It is a delicious and light muffin that you can easily add other flavor combinations too. Chocolate chips, walnuts, nut butter or even seeds and dried fruit are amazing in this.
- Preheat your oven to 350F.
- Mash the banana. Add the sugar and egg and combine well.
- Then add the remaining ingredients and mix until combined. Add any other nuts, chocolate chips or flavors at this point if you want to.
- Pour into a muffin tin.
- Bake for 20-25 minutes until the are lightly browed.
Gluten Free Flour Blend
As many of you know, I am gluten free so I test all my recipes with the gluten free options and make sure they work before posting them. Muffins become gluten free very easily because they are supposed to be light and airy and not chewy like breads.
I have created a BTMR Gluten Free Flour blend which I use in all my baking and have tested all my recipes with. I love it and you can have the recipe too. You get free access to it with a signup to my email newsletter.
Alternately you can buy Cup4Cup Gluten Free Flour on Amazon. This is my favorite store-bought gluten free flour blend.
If you make these banana muffins with other gluten free flour blends please let me know what you used and how it worked out!
