Oh…my..god…fudge. So fudge is the kinda thing you should make and share with your friends, family, neighbors, anyone at all really. This is not something you should make when you are home alone for the week (like I did).
I wasn’t truely alone. Jonny started back in college a couple weeks back and therefore it’s like I am home alone. While he is lost in calculus textbooks I am in the kitchen cooking things he doesn’t consider to be “brain food”. So that leaves me and a big pan of fudge to myself.
I had a couple cans of sweetened condensed milk in my cupboard (because I like to make cheesecake on a whim…also probably not a good idea) and so I decided to check out some recipes to use it up. I ended up on the Eagle Brand website and wouldn’t you know it…. a microwavable fudge recipe.
The process is simple. So simple that I thought it couldn’t possibly work. What I know about making candy is that it is an art of perfection. Sugar transforms into so many amazing candies depending on the temperature you heat it to. Check out this chart I borrowed from Wikipedia…
My concern with the recipe was that if my microwave was more or less powerful than the one used to test the recipe then instead of fudge I would get syrup or toffee. Buuuutttt… I gave it the benefit of the doubt and oh..my it make some frickin amazing fudge. Only 3 ingredients, 10 minutes in the microwave and a little time to cool and it was amazing.

I finally decided I couldn’t eat any more fudge by myself and brought the rest in to work. I have put it down on the lunchroom table and my fingers are crossed that it is all gone by the time I leave today 🙂
