Dirty Fried Rice

This is not a recipe but more of a concept. Dirty fried rice is a perfect way to use up leftover cooked rice along with almost anything else leftover in your fridge.

The idea is simple.

1) Saute any “hard” uncooked vegetables

Onions, celery, carrots, sweet potatoes, parsnips etc. This is a great time to add any onions, garlic and leeks too. Saute until everything is tender. Add any raw meat at this stage too.

2) Add your rice and protein

(beans, cooked chicken, shrimp… anything) as well as your seasonings. Meats should be precooked aside from shrimp, otherwise add them to the first step.

3) Add any quick cooking, frozen or precooked veggies

Add frozen corn, peas, carrots or stir-fry mix. This is also the time to add any leafy greens like spinach, or chard.

The whole process should take you no more than 10 minutes to get the meal to your table. Full of all your favorite leftovers and different every time you make it! What’s not to love?!?

Dirty Fried Rice - Back To My Roots

For the Dirty Fried Rice above I sauteed 2 yellow onions. Once soft I added my leftover pulled pork shoulder, cumin, salt, pepper and a smoked chipotle pepper.

Once everything was hot I added some frozen corn and leftover roasted tomatoes. Once these were heated through it was time to eat! The whole process took about 10 minutes.
