Fluffy Waffles Recipe (gluten free option)

Waffles are one of those perfect breakfast foods. They are so easy to make and everyone loves them. I love to serve mine with some greek yogurt to amp up the protein in the meal but no matter what you serve them up with they will be amazing.BTMR fluffy waffle recipe

I try to switch things up and eat them with some new toppings each time to really show off how versatile they are. Making fresh whipped coconut cream is a really delicious topping with fresh or stewed fruit. Especially if you make the waffles with coconut milk.

And don’t forget that waffles are equally as good served savory! Skip the brown sugar and top them with peameal bacon, an over easy egg and some hot sauce! Or fried chicken and gravy for a dinner waffle.

Gluten Free Waffles

 

Whipping up this recipe should take no more than 5 minutes. Whip eggs, add everything else. Pour into waffle iron. Wait. Top with your homemade maple syrup. Eat

Waffles (gluten free option)

Ingredients
  • 2 eggs
  • 2 cups all purpose flour (for gluten free use BTMR GFree Flour or Cup4Cup)
  • 1¾ cup milk (cow, almond, rice etc)
  • ½ cup vegetable oil (sub some or all for apple sauce)
  • 1 Tbsp brown sugar
  • 4 tsp baking powder
  • ¼ tsp salt
  • ½ tsp vanilla extract
Instructions
  1. Preheat your waffle iron
  2. Beat eggs in a bowl
  3. Add the remaining indredients and mix until smooth (do not overmix)
  4. Pour into waffle maker and follow the manufacturer directions

Oh, I forgot to tell you that waffles reheat like really, really well. Make a bunch on the weekend and pop them in the toaster to reheat during the week. Best take-to-work breakfast ever.

      With so many people having bad reaction to gluten its impossible to ignore. I think we all know someone who can’t have it so its always good to have options for them too 🙂 Especially when it’s good enough for everyone to enjoy so you don’t have to make two batches.
