This is my sisters famous lemon mushroom pasta (hi Shawna!!). She made it for me a few times over the years and I never forgot it. Just last week I emailed her hoping she still remembered the recipe. It turns out she still makes it! It is a rich dish that is perfect for a date night with the significant other but affordable enough to make for the whole family.
It packs a real punch of flavor from the garlic, lemon, and thyme and gets this rich creaminess from the sour cream and parmesan.
You can use any noodle shape you like but I am in love with these Barilla Farfalle noodles. They are adorable little bowties and I think they class up the meal perfectly for a date night. Barilla also has a line of gluten free pasta that you could feed even the pickiest eater and they would have no idea it was gluten free! Honestly, they are my fav gluten free brand out there and I can get them from a normal grocery store.
I made this pasta on Tuesday night for dinner. It was very fast for such an elegant tasting meal. I had it on the table in under a half hour.
But, life is sometimes unexpected and just as I was making the sauce Jonny had to leave for a few hours to fix my car. I can’t possibly be upset about that AND I learned something valuable here… it reheats extremely well!
I enjoyed mine with a glass of Riesling and some smooth jazz. Date night for one anyone?!? This is a big serving too! I ate half of it and kept the rest for the next day for lunch.
If it was spring I would add some fresh peas right at the end for a fresh pop of colour and flavor.
- ½ box Barilla farfalle noodles (or any noodle shape you love)
- 1 Tbsp butter
- 8 oz button mushrooms
- 1 small onion sliced
- 2 cloves garlic diced
- ¼ cup lemon juice
- 1 cup sour cream
- 2 Tbsp parmesan cheese
- zest from 1 lemon
- Boil the noodles as directed on the package and start the sauce while they cook, once the noodles are done strain and set aside
- Saute the mushrooms, garlic, onion and thyme in the butter over medium heat
- Once mushrooms are cooked, add the lemon juice, half the lemon zest, the sour cream, and parmesan cheese
- Salt and pepper as needed then toss the pasta in the hot sauce with the lemon zest
- Plate and top with fresh pepper
- Enjoy your date (for one or two)!!
This was a super affordable dinner too. It worked out like this:
1 box of Barilla Farfalle $2.20, I used half $1.10
2 Tbsp Butter (1lb = $3) $0.10
8 oz mushrooms $2.00
1 onion $0.10
2 cloves garlic $0.10
1 lemon for juice and zest $0.70
1 tub sour cream $3.30 I used half $1.15
2 Tbsp parmesan $0.10
The total meal for 2 people was $5.40 or $2.70 per person!
This leaves lots of room in the budget to grill some chicke or shrimp to serve on top, a caesar salad for a side dish or even a bottle of wine! See, having your date night at home can be far more romantic and affordable!
