Quinoa is the grain that everyone is eating these days and for good reason. It it full of vitamins, gluten free and is full of protein.
I am always looking for new ways to eat quinoa. Some things are a huge success while others are a miserable failure. A couple months back I bought a Cream of Quinoa cereal and my god it was terrible. I couldn’t even finish the small serving it made. It gives me shivers just thinking about it. What I am trying to say is that I wouldn’t recommend it…
I really DO enjoy quinoa though and will not be put off by a single bad experience. I just made up some of this super easy quinoa salad and I have been won over. There are so many variations to how this can be made (just like any good salad) but the principal will be the same.
- 1 cup quinoa
- 1¾ cup water
- 1 can beans (kidney, black, chickpeas, whatever)
- 1 cup chopped tomatoes
- ½ cup chopped onions
- Dressing:
- ¼ cup lemon juice
- ¼ cup olive oil
- 1 tsp cumin
- salt and pepper to taste
- Cook the quinoa in the water and set aside to cool
- Chop the tomatoes and onions and add to a bowl with the beans
- Whisk the dressing together
- Once the quinoa is cool, add to the veg and beans and toss in the dressing
- Allow to sit a minimum of 1 hour to allow the flavors to develop
