Quinoa Salad

Quinoa is the grain that everyone is eating these days and for good reason. It it full of vitamins, gluten free and is full of protein.

I am always looking for new ways to eat quinoa. Some things are a huge success while others are a miserable failure. A couple months back I bought a Cream of Quinoa cereal and my god it was terrible. I couldn’t even finish the small serving it made. It gives me shivers just thinking about it. What I am trying to say is that I wouldn’t recommend it…

I really DO enjoy quinoa though and will not be put off by a single bad experience. I just made up some of this super easy quinoa salad and I have been won over. There are so many variations to how this can be made (just like any good salad) but the principal will be the same.

Quinoa Salad
 
Ingredients
  • 1 cup quinoa
  • 1¾ cup water
  • 1 can beans (kidney, black, chickpeas, whatever)
  • 1 cup chopped tomatoes
  • ½ cup chopped onions
  • Dressing:
  • ¼ cup lemon juice
  • ¼ cup olive oil
  • 1 tsp cumin
  • salt and pepper to taste
Instructions
  1. Cook the quinoa in the water and set aside to cool
  2. Chop the tomatoes and onions and add to a bowl with the beans
  3. Whisk the dressing together
  4. Once the quinoa is cool, add to the veg and beans and toss in the dressing
  5. Allow to sit a minimum of 1 hour to allow the flavors to develop
Notes
There are so many more things you can add to this. Try adding corn, sweet peppers, squash, carrots, pumpkin seeds, sunflower seeds, chia etc. Use what you have!
