This past weekend I was fortunate to be able to fly out to Nova Scotia to surprise my dad for Father’s Day. My mom did an awesome job at keeping it secret and the surprise was a success. I had some amazing meals while I was there and was inspired to get back in the kitchen and share some of them with you.
On Sunday, we drove out to visit my Aunt Nancy on the lake for lunch. She made an amazing shrimp caesar salad, crisp olive breads, balsamic onions and tomatoes, and rhubarb cake. I can’t even tell you how amazing it was.
She made me a copy of the rhubarb cake so I will try to get that up for you guys soon as well!
I was surprised to find out she has made her own caesar dressing! It is super simple and way better than the bottled stuff. By using mayo, she was able to avoid dealing with raw eggs. She changes the amounts each time and “eyeballs it” but I have put together a recipe which is a good place to start from.
- 1 cup mayo
- ½ cup grated parmesan
- 1 tsp Worcestershire
- 1 tsp dijon mustard
- 2 Tbsp white wine vinegar
- 1 tsp anchovy paste
- 2 cloves of garlic, chopped
- In a bowl, mix together all of the ingredients.
