This past weekend was awesome. Jonny and I went into Toronto to see a show which was awesome and hilarious. After the show we were able to meet up with a couple of friends who we haven’t seen in too long.
There is something awesome about friends you can see after years apart and carry on as if you saw eachother yesterday. I left feeling revitalized and happy. The way you feel after spending time with people who seem to fill you up with energy. We drove back to Niagara planning our next visits out to see them and talking about how amazing our friends are.
On Sunday we headed back out on the road for a celebration dinner with my family because… I’m getting married!!!! I can’t even believe it! Jonny and I have been together for 8 years and yet I was completely surprised by the proposal… and ridiculously happy. I am a fiance! I am going to be a wife! Aaaaaahhhh! Okay, I’m cool now. I’m good…
My sister made this amazing baked brie with walnuts, pear and maple syrup and oh…my…god I think I ate half the wheel to myself. Seriously… look at how amazing thay is…
I mean come on! I didn’t stand a chance against this thing. Doesn’t she know I’m going to have to go wedding dress shopping?!? But the brie was calling out “eat me, photograph me!!”.
I am sorry about the photo quality/setup. I only had my iphone with me and although I love it, it’s pretty old and has taken a couple too many dunks in the tub/toilet/lake to take a high quality pic lol.
Mmmm, isn’t it even sexier up close? Honestly, I almost got too full to eat but my dad made his famous lasagna and a no-noodle lasagna for me that was incredible!! It has layers of zucchini, ricotta, spinach, portabello mushrooms and gooey mozzarella. If you are lucky, I will see if I can get the recipe from him for it. My dad cooks a lot like I did before I needed to measure everything out for you: a handful of this, a pinch of that, a little more this.
The brie though… that is why we are all here today. Look how crazy easy this recipes is. There is really no way for this combination of ridiculously delicious flavors to not make something incredible.
- 1 wheel of brie
- 2 tsp butter
- 3 Tbsp maple syrup
- 1 pear thinly sliced
- walnut halves
- Preheat oven to 350F
- In an oven safe dish add the brie to the center, then drop the butter and maple syrup in to the bottom, they will mix as they cook
- Top the brie with pear slices and walnut halves
- Bake for 15 minutes or until warm and bubbly
- Serve with an assortment of crackers
Bonus points if you use your own homemade maple syrup. We are tapping our trees this week and are so excited that the weather has finally warmed up enough to . With the extreme cold this year we are hopefully for a big maple collection this year.
