There are those days when you need warm chocolate cake right away and I am here to show you exactly how to get it!
This recipe is easy. It takes about 5 minutes to gather up the ingredients and put it together and another minute in the microwave. That is seriously fast! And… it’s completely gluten free!
- 2 tbsp butter
- 2 tbsp sugar (I used erythritol)
- 2 Tbsp almond flour
- 2 Tbsp cocoa powder
- 2 tsp coconut flour
- ½ tsp vanilla
- ½ tsp baking powder
- 1 large egg
- Melt the butter in your mug and stir in the sugar
- Add the rest of rest of the ingredients and mix together
- Microwave 60-75 seconds
- Allow to cool slightly and share with a friend or eat the whole thing yourself 🙂
The nutrition information is for 1/2 the cake but honestly I ate pretty much the whole thing aside from a couple bites I gave Jonny. I even topped mine with cream cheese icing because it was a rough day and that was something I really needed in my life :p
That being said I know some of you are going to look for something a little “lighter”. I am confident that the butter can be replaced with apple sauce or another fruit or veggie puree (banana or pumpkin?). I will work on a lighter mug cake recipe for you and post it here when I get it together 🙂
