It is possible that I have been a little obsessed with pancakes lately. They make such an amazing dinner especially with these high protein coconut flour pancakes.
If you missed it a couple weeks back, you should check out my High Protein Pancakes and also my Buckwheat Pancakes which were both awesome.
This week I decided to stray from those recipes I love and try a coconut flour version. This is grain free and I really love the texture that coconut flour gives them. They had an amazing rise and were so filling!
Do you see how tall those are?!? Fluffy pancakes are my very favorite. I want my pancakes to be light and cake-like and these were the perfect ones.
All pancakes are amazing topped with fresh homemade chia jam. Honestly, you have to try it!
- 4 eggs
- ¼ cup coconut flour
- 1 tsp baking soda
- 2 Tbsp protein powder or PB2
- 1 tsp vanilla
- ½ mashed banana
- Mix everything together until well combined
- Cook on medium heat until bubbles begin to form on top, then flip
- Serve warm with fresh fruit, maple syrup or whipped cream
