I am just popping in quickly to share this cornmeal coated fish recipe with you 🙂 It is crunchy and flavorful and I knew when I tried it that I had to share it right away.
I have been trying to get more seafood into my diet and have been playing with some new fish recipes in particular. I happen to have a bag of frozen basa that I am working with right now but any white fish would work for this.
Oh, and if you are looking for a deep fried fish and chips type recipe that is gluten free, then I 100% recommend this recipe by Tyler Florence. It is honestly better than wheat flour batter.
But this recipe is more of a thin coated, pan fried dealio. I was looking for a nice gluten free coating that also provided some crunch. In the past I have used ground pecans and almonds (which I still believe is a very tasty option). But I only had almond flour, not ground almonds this time and I wanted a little crunch to the fish. So, here is the super easy, perfect-for-a-weeknight recipe!

Also, I am sorry about the pic hahaha. I didn’t know at the time that I was going to love it so much and share it with you guys so this is just a snap I took on my phone. As you can see I ate it with some hot sauce. I am kind of addicted to this stuff we get from a local restaurant with their falafel balls and I put it on everything!
- 2 basa fillets
- ¼ cup almond flour
- ¼ cup cornmeal
- ¼ tsp salt
- ½ tsp paprike
- ¼ tsp garlic powder
- Cut the basa into "fingers"
- Combine the remaining ingredients
- Lightly coat the pieces of fish and put into a nonstick pan on medium heat
- Cook until flaky, turning once half way. About 5 minutes total depending on the thickness of your fish
