High Protein Pancakes (gluten free, paleo)

Serves: 4 pancakes
  • 1 egg
  • 2 egg whites
  • 2 Tbsp coconut flour
  • 2 Tbsp ground flax seed
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • 6 Tbsp milk
  • ½ banana
  • ½ tsp vanilla
  1. Put the eggs into blender for 30 seconds
  2. Add the rest of the indredients and blend until well combined
  3. Let the mixture sit and thicken for 5 minutes
  4. Set a non-stick pan to medium heat
  5. Cook each pancake until bubbles form on the top and then flip to cook on the other side
