Oil and Vinegar Slaw
  • ¼ cup apple cider vinegar (or red/white wine vinegar)
  • 2 Tbsp white sugar
  • 2 Tbsp olive oil (or peanut, coconut etc)
  • 2 cups shredded cabbage
  • 1 cup shredded carrot
  • salt and pepper to taste
  1. Combine the vinegar, sugar and oil and whisk together
  2. Add the cabbage and carrot and toss to coat
  3. Add salt and pepper to taste
  4. Let sit 20+ minutes, toss again and serve
