Bacon Jam
  • 1 lb bacon cut into 1 inch pieces
  • 1 cup diced onion
  • ½ cup apple cider vinegar
  • ½ cup brown sugar
  • ¼ cup maple syrup (homemade but you can use store-bought)
  • ¼ cup coffee
  1. Brown the bacon, drain off most of the fat
  2. Add the onions and let them sweat
  3. When onions are translucent, add the remaining ingredients and let simmer until the mixture is thick (about 20 minutes)
  4. Pulse in a food processor until you form small chunks
  5. Put in a jar in the fridge until you are ready to use
