Almond Flour Biscuits
  • 1½ cups almond meal
  • ⅓ cup of unsalted butter, coconut oil or shortening
  • 4 egg whites
  • 1 tsp baking powder
  • ½ tsp salt
  1. Cut the fat into the almond meal until you have pea sized pieces
  2. In a separate bowl whisk together the egg whites, baking powder and salt until frothy
  3. Add the egg white mixture to the almond mixture and stir to combine. It will look thin but the almond flour will absorb the liquid
  4. Line a baking sheet with parchment and spoon the mixture into 10 biscuits (I used an ice cream scoop)
  5. Pat down the biscuits slightly
  6. Bake at 350F for 20 minutes
You want to work with cold ingredients (egg whites, fat etc). For a better biscuit you can pop the biscuits into the fridge or freezer while you wait for the oven to preheat
