Almond Flour Pancakes
Serves: 2 large pancakes
  • ½ cup almond flour
  • 1 egg
  • 2 Tbsp water
  • ¼ tsp baking powder
  • *optional
  • vanilla, cinnamon, sweetener, berries, chocolate chips etc
  1. Combine the flour, egg, water and baking powder
  2. Stir until just combined
  3. Allow to sit while you preheat a nonstick pan on medium heat
  4. Pour into two pancakes and allow to cook until browned on the first side and the sides begin to get dry, about 3 minutes
  5. Flip and cook on the second side for another 2-3 minutes, depending on the heat of your pan
You can use milk instead of the water. I would not recommend other flours in place of the almond flour as they do not swap out cup-for-cup.
