Roasted Pumpkin

  • 1 cooking pumpkin
  • coconut oil
  • pumpkin pie spice
  1. Preheat oven to 400F
  2. Slices up you pumpkin and remove the seeds (roast these too!)
  3. Toss the pumpkin with the (liquid) coconut oil and spices until well coated
  4. Lay out flat on a baking sheet and bake for 20 minutes
Feel free to experiment with the spices. Using butter, salt and pepper would make delicious roasted pumpkin and the leftovers would make an amazing soup. Curry spice works amazingly on pumpkin too. And don't forget rosemary is another great option.
