Hollandaise Sauce
  • 4           egg yolks
  • 1 Tbsp  lemon juice
  • ½ cup butter
  • 1 pinch  cayenne
  • 1 pinch  salt
  1. Mix the egg yolks and lemon juice in a metal bowl and whisk until it has doubled in size.
  2. Set the bowl on a pot of simmering water (like a double boiler). Do not let the water touch the bowl.
  3. Continue to whisk, adding ⅓ of the butter.
  4. Then slowly add another ⅓ of the butter and whisk to combine.
  5. Finally add the last ⅓ of butter and continue to mix until the sauce is thick.
  6. Remove from the heat and stir in a pinch of cayenne and salt.
